Ingredients:
20 slices of fresh toast
50 g melted butter
For a meggyragú:
500 g pitted sour cherries
100 g sugar
1 tablespoon of starch
30 ml MaxAroma Meggy Aroma
a few drops of lemon juice for freshness
Preparation:
Take a sharp knife and cut the bread slices. Imagine tying the corners of the bread diagonally. Along the imaginary diagonal, start cutting the bread 2 fingers from the top right corner, cutting all the way to the bottom right corner, and then make the cut in the same way for the remaining three corners. A small triangular flap is formed at each of the four corners. Fold the narrow end of the tab under the tab next to it, then repeat this folding for all four tabs. This will give you a small basket shape in the middle, into which you will place your cherry ragout. Spread the folded loaves thinly with melted butter and bake them in the oven until golden brown.
Preparing a meggyragu:
In a saucepan, mix the cherries and sugar over medium heat. Allow the sugar to dissolve and the cherry seeds to drain. When the cherries begin to collapse, let them continue to cook until they thicken and soften slightly. This usually takes about 10-15 minutes. In a small bowl, mix the starch with the water to make a smooth paste. When the cherry pits are soft and the sauce has thickened, slowly pour in the starch paste and stir thoroughly to avoid lumps. Add the MaxAroma Meggy flavouring and continue to simmer the sauce for a few more minutes until it thickens completely and the starch flavour disappears. Add a little lemon juice for freshness. You can add more sugar or lemon juice to taste, if desired. When the sauce is ready, remove from the heat and leave to cool. Pile a dollop of cherry sauce in the middle of the twisted toast and serve.
