Cherry Pie Recipe

This cherry pie is the perfect dessert for any occasion. The delicious combination of crispy, buttery pastry and juicy cherries will be everyone’s favourite. Vanilla and lemon zest add freshness to the filling, while sugar and cornstarch create a thick, sweet sauce. The easy-to-make lattice-top pie is spectacular and delicious. You can serve it hot or cold, perhaps with a scoop of vanilla ice cream on top.

Cherry Pie Recipe

Ingredients:

Pasta:

  • 250 g flour.
  • 125 g cold butter
  • 50 g sugar
  • 1 egg
  • 1 pinch of salt
  • 2-3 tablespoons cold water

Stuffing:

  • 500 g pitted cherries
  • 100 g sugar
  • 2 tablespoons corn starch
  • 1 teaspoon vanilla extract
  • 1 teaspoon freshly grated lemon zest
  • 1 tablespoon lemon juice
  • 1 pinch of salt

For the spread:

  • 1 egg yolk
  • 1 tablespoon of milk

Preparation:

  1. Preparing the pasta:
    1. In a large bowl, mix the flour and salt.
    2. In a large bowl, add the cold, cubed butter and crumble with the flour until it has a crumbly consistency.
    3. Stir in the sugar.
    4. Add the eggs and cold water and knead quickly until you have a homogeneous dough.
    5. Form into a ball, wrap in cling film and refrigerate for at least 30 minutes.
  2. To make the filling:
    1. In a large bowl, mix together the cherries, sugar, cornstarch, vanilla extract, lemon zest, lemon juice and salt. Let stand for about 15 minutes to allow the cherries to drain.
  3. Pie assembly:
    1. Preheat the oven to 180°C.
    2. Take the pastry out of the fridge and divide it into two parts.
    3. Roll out one piece of dough and line a pie dish with it.
    4. Pour in the cherry filling.
    5. Roll out the other piece of pastry and cut into strips. You can use these to make a lattice for the top of the pie.
    6. Mix the egg yolks with the milk and brush the top of the pie.
  4. Bake:
    1. Bake the pie in the preheated oven for about 45-50 minutes, until the pastry is golden brown and the filling is bubbling.
    2. Remove from the oven and allow to cool before slicing.
