Making apricot jam at home is very easy, especially if you use fresh, ripe apricots.
Ingredients:
1 kg ripe apricots
400-500 g of granulated sugar (the amount of sweetener can vary according to taste, depending on how sweet you like your jam)
juice and grated zest of 1 lemon
30 ml MaxAroma Apricot Aroma
Preparation:
Wash the ripe apricots thoroughly, then cut in half and remove the seeds.
Put the apricots in a large pot and add a little water, just enough to keep the bottom of the pot from burning. Don’t use too much water, as the apricots will also release a lot of juice.
Bring the apricots to the boil over a medium heat, then reduce the heat to low and simmer for a further 15-20 minutes, or until they release their juices. When the apricots are soft and slightly cooked, homogenize the jam with a stick blender. The goal is to get the apricots to come together to a smooth creamy consistency.
Once the desired pulp consistency is reached, add the lemon juice, grated lemon zest, granulated sugar and MaxAroma Apricot Flavour, which brings out the apricot flavour.
Continue cooking the jam over medium heat, stirring frequently. It may take a few minutes for the sugar to dissolve. When the jam has thickened and the sugar has dissolved and the desired consistency has been reached, remove from the heat.
Pour into sterilised jars and close tightly. Then place the jars in boiling water for 15-20 minutes.
