Fondant is a smooth, flexible sugar paste often used to coat and decorate cakes and pastries. Making homemade fondant is easier than you might think, and much tastier than the store-bought variety. Here’s a recipe for making peach homemade fondant:

Ingredients:

1 packet (7 g) gelatine (approx. 2 teaspoons)

50 ml cold water

120 ml corn syrup or honey

2 tablespoons butter or vegetable fat

900 g icing sugar, sifted

10 ml MaxAroma Peach Aroma

A few drops of MaxColor Strawberry Red Food Colouring

Gelatin preparation:

Mix the water and MaxAroma Peach Flavouring, sprinkle in the gelatine and leave to stand for 5 minutes to swell. Place the gelatine over a steam and heat slowly, stirring continuously, until the gelatine is completely dissolved. Add corn syrup or honey and butter or vegetable shortening to the dissolved gelatin. Continue heating until all ingredients are completely dissolved and a smooth mixture is obtained. Do not boil. If you want to colour the fondant, add MaxColor Strawberry Red Food Colouring now. Sift the icing sugar into a large bowl and make a well in the centre. Pour in the warm gelatine mixture. Stir the icing sugar into the gelatine mixture with a spatula or wooden spoon until a thick mass is obtained. When the mixture becomes too thick to mix, turn it out onto a work surface sprinkled with icing sugar and continue kneading by hand. If necessary, add more icing sugar until the fondant is smooth and springy.

Wrap the fondant in plastic wrap and let it rest at room temperature for at least an hour to make it easier to handle. Roll out the fondant to the desired thickness on a work surface sprinkled with icing sugar before using.

Cover cakes or pastries with it and mould to your liking. To make decorations, shape and cut into desired shapes.

Store the fondant in an airtight container or in plastic wrap to prevent it from drying out. It will keep for up to a week at room temperature, but will stay fresh longer in the fridge.
