Strawberry macarons are a delicious and elegant dessert, perfect for special occasions or simply to please your sweet tooth
Ingredients:
For the macaron:
A few drops of MaxColor Strawberry Red Food Colouring
56 g egg white
75 g icing sugar
75 g almond flour
75 g icing sugar
For cream:
10 ml MaxNatural Strawberry Natural Flavouring
150 g white chocolate
50 ml whipped cream
50 ml strawberry jam
Preparation:
Draw circles 4 cm in diameter on baking paper.
Sift the almond flour into a mixing bowl. Start whisking the egg whites, when they are a little whiter add the icing sugar and MaxColor Strawberry Red Food Colouring, when the foam is stiff but not yet crumbly, gently fold in 1/3 of the almond flour. Then add the rest of the foam. Work gently to keep as much air in the dough as possible and to prevent the dough from breaking.
Spread the prepared baking paper on a baking tray and press an equal number of small mounds of the mixture into the meringue bag, in the circles you have drawn. Straighten the tiny air bubbles with a toothpick. After resting for 30 minutes, bake in a preheated oven at 135°C for 17 minutes.
To make the filling, melt the white chocolate in the cream over steam, add the strawberry jam and MaxNatural Strawberry natural flavouring. Once cool, pour into a meringue bag and chill in the fridge for a few hours.
Then press the amount you like onto the macaron shell and glue it together with another.
