The “10 eggs” home-made pasta and our food colours! Feel free to experiment too!
Basic recipe:
100 g flour
1 egg
1 pinch of salt
a few drops of MaxColor Raspberry Red Food Colouring
Preparation:
Combine the room temperature eggs and MaxColor Raspberry Red food colouring in a mixing bowl and sift in the flour. Knead the dough with floured hands until the dough separates from the bowl. Place the dough, wrapped in foil, in the refrigerator to rest for at least 30 minutes.
Using a floured rolling pin, stretch the dough to a suitable thickness, cut it and knead it.
Tip:
Fresh egg noodles are cooked for a shorter time with more attention than their ready-to-eat counterparts. Stir gently once the pasta is in the flaming water, as the starchy layer on the surface tends to stick together. It takes about two minutes to cook from the time the water comes back to the boil.
